I must admit the first time I experienced beet kvass, I thought it was the most disgusting thing I’d ever tasted.
I had become a fan of kombucha tea and the beet kvass was sitting right next to it and made by the same local producer. I knew they made a superior kombucha tea, so I was willing to give it a try.
I purchased the bottle and went for a little drive. After my first sip, I nearly gagged. It was SO salty, I wondered who would like this stuff – plus it was $4.99!
Then something odd happened. I took another sip, then another, and another, and VERY soon, the bottle was empty. Obviously, my body craved it. I got another bottle, then another, then another, and realized that I craved beet kvass. I also learned that at $4.99 a bottle, that I needed to make my own….and the only ingredients were beets, water, whey, and sea salt.
Now, I make my own beet kvass on a regular basis and have even included it as an approved beverage for my clients on the Dream Drops Weight Loss program.
So, beet kvass is a lacto-fermented beverage meaning that it contains tremendous amounts of healthy bacteria and enzymes. It serves as a wonderful liver/gall bladder tonic, as these organs thrive on the nutrients in beets. It’s very easy to make and I feel like anyone would benefit from 4-8 oz. per day.
The ingredients are simple: 1-2 medium sized beets, sea salt, purified water, whey, and a quart jar. ACTUALLY, the whey is optional. I have always used it, but a Google search will quickly yield many who feel the whey is a non-essential ingredient. I have always used it, however it’s not the easiest thing to find if you aren’t eating yogurt or don’t have an easy source. The next time I make it, I will leave the whey out. I can always get water, beets, and sea salt. Whey is the challenge, so if I can make it without BINGO!
Okay, so here we go: 1) Chop up your beets into 1/2 inch cubes. I have always peeled them, but there may be some benefit to merely washing them good. The natural bacteria of the beets is good. 2) Put them in a quart jar with about 1 Tbs. sea salt. 3) Fill the rest of the jar with water, put the lid on, mix it up a little, then set it on your counter or in a dark area, at room-temperature, for a few days (3 or so). After 3 days, you may drain the kvass and either make another batch using the same beets, or just shred them and put them on a salad. 4) Place the drained kvass in a container and refrigerate. It will be ready to drink in a day or so, but best if let to continue to sit for a few more days, or weeks.
Drink 4-8 oz. per day, and don’t be surprised if your your urine and feces are purple.
